Garlic Rosemary Steak & Potato Skillet

Golden potatoes and sliced steak make a satisfying skillet dinner with a short ingredient list. Parboiling the potatoes keeps their centers tender while the skillet creates a crisp surface. Cook the steaks whole and slice after resting to make temperature checks easier.

Serves: 4 | Estimated total time: 40 minutes

Ingredients

  • 1 1/2 pounds baby potatoes, halved (quarter any large ones)
  • 1 1/4 pounds boneless sirloin steak, about 1 inch thick
  • 2 tablespoons olive oil, divided
  • 1 tablespoon butter
  • 3 garlic cloves, minced
  • 2 teaspoons finely chopped fresh rosemary
  • 3/4 teaspoon salt, divided, plus salt for potato water
  • 1/2 teaspoon black pepper

How to make it

  1. Put potatoes in a saucepan, cover with water and lightly salt. Bring to a boil and simmer 8–10 minutes until just tender. Drain well and let steam-dry.
  2. Pat steaks dry and season with 1/2 teaspoon salt and the pepper. Heat 1 tablespoon oil in a heavy skillet over medium-high heat. Cook steaks about 4–6 minutes per side, adjusting for thickness, until the center reaches at least 145°F. Rest on a clean plate for at least 3 minutes.
  3. Add remaining oil and drained potatoes to the skillet. Cook 8–10 minutes, turning occasionally, until golden. Season with remaining 1/4 teaspoon salt.
  4. Reduce heat to low. Add butter, garlic and rosemary; toss for 30–60 seconds until fragrant without burning garlic.
  5. Slice rested steak across the grain and serve alongside the potatoes, spooning over any resting juices.

Helpful tips

Use a thermometer inserted into the thickest part of the steak; time alone cannot establish doneness. Work in batches if the skillet is crowded and add a splash of water if browned bits threaten to burn.

Storage and reheating

Refrigerate leftovers in shallow covered containers within 2 hours, or within 1 hour if the room is above 90°F. Keep the refrigerator at 40°F or below and use leftovers within 3–4 days. Reheat to 165°F throughout. These storage guidelines follow USDA guidance.

Common question

Can I use dried rosemary? Use about 2/3 teaspoon, crushing it between your fingers before adding.
