How to make it
- Whisk flour, sugar, baking powder, spices and salt in a large bowl. In another bowl whisk milk, pumpkin, egg, butter and vanilla.
- Fold wet ingredients into dry just until no dry flour remains. Small lumps are fine. Rest 5 minutes; add a tablespoon or two of milk if the batter will not spread at all.
- Heat a lightly oiled nonstick skillet over medium-low heat. Add batter in 1/4-cup portions, leaving space between pancakes.
- Cook 3–4 minutes until edges look set and bubbles appear. Flip and cook 2–3 minutes more. Centers should be set with no wet batter; egg-containing batter should reach 160°F. Lower heat if the outside browns before the inside cooks.
- Repeat with remaining batter, lightly oiling the pan as needed. Serve warm with optional maple syrup.
