  • 1 cup frozen corn
  • 1/2 teaspoon fine salt, then more to taste
  • 1 tablespoon lime juice
  • Chopped cilantro and lime wedges, optional

How to make it

  1. Heat the oil in a large pot over medium heat. Cook the onion and bell pepper for 6–8 minutes until softened.

  2. Stir in the garlic, chili powder, cumin, and paprika for 30 seconds. Add sweet potatoes, tomatoes, broth, and salt.

  3. Bring to a simmer. Cover partially and simmer gently for 15 minutes, stirring occasionally.

  4. Add the black beans and corn. Continue simmering for 10–15 minutes, until a fork slips easily into the sweet potato. Add a splash of broth if the chili becomes too thick.
