Ingredients

  • 1 1/2 pounds sweet potatoes, peeled and cut into 1/2-inch cubes
  • 12 ounces fully cooked chicken sausage, sliced 1/2 inch thick

  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt

  • 1 tablespoon lemon juice

How to make it

  1. Heat oven to 425°F. Toss sweet potatoes with 1 tablespoon oil, paprika, garlic powder, thyme, salt and pepper.
  2. Spread on a large rimmed baking sheet and roast 15 minutes. If the pieces are crowded, use two trays.
  3. Toss broccoli with remaining oil. Add it and the fully cooked sausage to the potatoes, stir and spread out again.
  4. Roast 15–20 minutes more, turning once, until potatoes are easily pierced and broccoli edges are browned. Heat chicken sausage to 165°F or follow its package if it specifies a higher temperature.
  5. Finish with lemon juice. Serve straight away, dividing vegetables and sausage evenly.
