Ginger Garlic Tofu Broccoli Bowls

Ingredients

  • 1 block (14–16 ounces) extra-firm tofu, drained
  • 2 tablespoons cornstarch, divided
  • 2 tablespoons neutral oil
  • 4 cups small broccoli florets
  • 3 tablespoons water for steaming
  • 3 tablespoons reduced-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon maple syrup
  • 2 teaspoons finely grated fresh ginger
  • 2 garlic cloves, minced
  • 1/2 cup water for sauce
  • 3 cups cooked rice
  • Optional: 1 teaspoon sesame seeds for serving

How to make it

  1. Pat tofu dry, press gently between clean towels, then cut into 3/4-inch cubes. Toss with 1 1/2 tablespoons cornstarch.
  2. Heat oil in a large nonstick skillet over medium-high heat. Brown tofu 8–10 minutes, turning carefully; transfer to a plate.
  3. Add broccoli and 3 tablespoons water. Cover and steam 3–4 minutes until crisp-tender, then uncover.
  4. Whisk soy sauce, vinegar, maple syrup, ginger, garlic, 1/2 cup water and remaining 1/2 tablespoon cornstarch. Pour into skillet and simmer 1–2 minutes until thickened.
  5. Return tofu and toss gently until hot. Serve over warm rice with optional sesame seeds.
