Jack-o-Lantern Quesadillas
Cut simple pumpkin faces into tortillas for a Halloween lunch with a cheesy center. An adult should handle the knife work before the quesadillas go into the oven.
Serves: 4 | Estimated total time: 25 minutes
Ingredients
- 8 medium flour tortillas
- 1 1/2 cups shredded orange cheddar (6 ounces)
- 1 cup canned black beans, drained and rinsed
- 1/2 teaspoon ground cumin
- 1/4 teaspoon smoked paprika
- 2 teaspoons olive oil
- 1/2 cup salsa, for serving
How to make it
- Heat oven to 400°F. Line two sheet pans with parchment suitable for that temperature.
- On a cutting board, have an adult cut small triangular eyes and a simple mouth into 4 tortillas using a small sharp knife.
- Mash beans with cumin and paprika. Spread thinly over the other 4 tortillas, keeping filling away from the edge. Cover with cheddar so orange cheese shows through the faces.
- Place cut tortillas on top, brush lightly with oil and bake 8–12 minutes until crisp at the edges and cheese is melted.
- Cool briefly before cutting or serving with salsa; the filling will be hot.
Helpful tips
Keep face openings fairly small so the top tortilla stays intact. Serve these fresh for the best crisp edges.
Storage and reheating
Refrigerate perishable leftovers in shallow covered containers within 2 hours, or within 1 hour above 90°F. Keep the refrigerator at 40°F or below and use within 3–4 days. For dishes served hot, reheat leftovers to 165°F throughout. Keep bread and crisp toppings separate until serving. See USDA leftover storage guidance.
Common question
Can children help? They can mash beans and sprinkle cheese; leave cutting and handling hot pans to an adult.
