- 1 1/2 pounds boneless skinless chicken thighs

- 3/4 teaspoon salt, divided
- 1/4 teaspoon black pepper
- 1 lemon, cut into wedges

- Heat oven to 425°F. Toss potatoes with 1 tablespoon oil and 1/4 teaspoon salt on a large rimmed sheet pan. Roast 15 minutes.
- Meanwhile, coat chicken with remaining oil, paprika, garlic powder, oregano, remaining salt and pepper. Wash hands and utensils after contact with raw chicken.
- Turn potatoes and arrange chicken on the pan with space between pieces. Use a second pan if crowded.
- Roast another 20–25 minutes until potatoes are tender and chicken reaches at least 165°F in the thickest part. Check several pieces with a food thermometer.
- Rest chicken 5 minutes, then serve with lemon wedges.
