Rosemary White Bean Mushroom Toast
Creamy mashed white beans give mushroom toast a satisfying base. Brown the mushrooms in a wide skillet so their edges turn golden instead of steaming.
Serves: 4 toasts | Estimated total time: 25 minutes
Ingredients
- 2 tablespoons olive oil, divided
- 8 ounces mushrooms, sliced
- 2 garlic cloves, minced
- 1/2 teaspoon dried rosemary, crushed
- 1 can (15 ounces) white beans, drained and rinsed
- 3 tablespoons low-sodium vegetable broth
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 thick slices whole-grain bread
How to make it
- Heat 1 tablespoon oil in a wide skillet over medium-high heat. Add mushrooms in an even layer and cook 7–9 minutes, stirring occasionally, until browned.
- Add garlic and rosemary; cook 30 seconds. Transfer mushrooms to a plate.
- Add remaining oil, beans and broth to the skillet. Warm over medium heat for 3 minutes, then mash roughly. Stir in lemon juice, salt and pepper.
- Toast bread until crisp. Spread beans onto toast and add mushrooms. Serve immediately.
Helpful tips
Crush dried rosemary finely so the needles do not feel woody. Keep toppings separate from bread if preparing ahead.
Storage and reheating
Refrigerate perishable leftovers in shallow covered containers within 2 hours, or within 1 hour above 90°F. Keep the refrigerator at 40°F or below and use within 3–4 days. For dishes served hot, reheat leftovers to 165°F throughout. Keep bread and crisp toppings separate until serving. See USDA leftover storage guidance.
Common question
Can I use fresh rosemary? Use 1 1/2 teaspoons finely chopped fresh rosemary in place of the dried amount.
